Alfalfa is rich in vitamins, minerals, 8 essential amino acids and digestive enzymes. The reason it is so rich in nutrients is because the roots of the plant can grow as far as 125 feet under the ground, where it absorbs natural minerals from deep within the earth.

Alfalfa contains vitamins A, B1, B6, B12, C (four times that in citrus juice), D, E, K, P, niacin, pantothenic acid, biotin, folic acid, saponins, calcium (very high), phosphorous, potassium, magnesium, iron, zinc, and copper. (It contains all the known vitamins and minerals for life, although some of these are only in trace amounts, so alfalfa is not a perfect food by itself.) It is one of the highest chlorophyll bearing plants.

An herb as loaded with vitamins, minerals, and amino acids as alfalfa, is good for fighting off many diseases.

Fluoride in alfalfa is not the artificially made sodium fluoride, which is an aluminum manufacturing by-product that is poisonous to life. Instead, the fluoride in alfalfa prevents tooth decay and hardens bones naturally without toxic side effects. 

Arthritis and bursitis are often caused by an over-acid condition in the body. The acid settles in joints, causing inflammation. Alfalfa can help to alkinalize the body and reduce inflammation (unless the diet is full of processed and chemical-laden foods, white flour and sugar.)

The Chinese treat intestinal and kidney disorders with alfalfa. Alfalfa contains a "vitamin U" factor, which prevents ulcers in test animals.

The saponins can help to regulate high or low blood pressure and inhibit high cholesterol. Alfalfa strengthens the arteries and blood cells throughout the body.

Leanne was asking about hormone rich foods. Alfalfa is one of those phytosterol-rich herbs, which will nourish the ovaries, adrenal gland, and pituitary gland.

Alfalfa produces richer milk in nursing mothers and increases the quality and nutritional value of poultry eggs.

The alfalfa plant is not normally used for human food because it is one of the highest fibrous herbs in existence and humans don't have the ability of breaking down the fiber. However, alfalfa is the basis for liquid Chlorophyll, with a balance of chemical and mineral constituents almost identical to human hemoglobin.

Cautions: Alfalfa should not be consumed by those who have auto-immune diseases, like lupus. Alfalfa seeds should NEVER be eaten because they contain a toxic amino acid called cavanine, which causes a blood disease called pancytopenia. (Sprouted seeds are good to eat)
